Wine making
It is with the greatest care that we make wine from our grapes in our thermally regulated vats.
For red wine the temperature of fermentation is maintained at around 26°C for wines to drink young and around 30°C for wines with the potential for keeping.
The rose is obtained by 'bleeding' and then made into wine between 18°C and 21°C.

Domaine de Lancement 2006
The deep ruby colour, red fruits in the mouth and on the nose, and hint of liquorice make this wine an ideal companion for grilled meat.
Domaine de Lancement 2005
The deep ruby colour, nose of red fruits and spices, ample and supple mouth with notes of pepper make this wine an ideal companion to grilled meat or cheese.

Carescade 2009
A scintillating light pink colour with reflections of copper.
The bouquet is very expressive, focussing on a basket of freshly harvested berries (redcurrents and wild strawberries), notes of pomegranate are also in evidence. The mouth is full bodied, smooth and persistant.
Carescade 2008 (unavailable)
Made from 100% Malbec grapes this rosé is a "Cascade of caresses". Through its aromatic intensity and touch of excitement it refreshes your summer days. On the nose we find hints of red fruits (strawberry, red currant). In the mouth the flavour of red currant predominates and makes proof of a good length.
Ideal with salads, grills, as an aperatif with typical snacks from Quercy or maybe with shell fish. Serve 10°-12°C.
